Good Food Revolution Visits The Fairmont Royal York’s Rooftop Garden

Good Food Revolution’s Malcolm Jolley recently visited The Fairmont Royal York rooftop garden for the annual closing of the bee hives. The hives are an integral part of the hotel’s rooftop garden, pollinating the herb, fruit and vegetable gardens which grow there.

While visiting the garden, Malcolm stopped to chat with Executive Chef David Garcelon. Watch the video above.

Fairmont Royal York Rooftop Garden Featured in ‘The New York Times’

The Fairmont Royal York’s rooftop garden was featured in an article in The New York Times on how hotels are taking ‘locally grown’ to the next level.

Writer Tanya Mohn visited the Royal York’s 14th floor rooftop garden and spoke with Executive Chef David Garcelon who says he says he enjoys checking on the alpine strawberries, Malabar spinach, mojito mint and several varieties of wine grapes in his garden.

The Fairmont Royal York was one of the first hotels in the world to have its own rooftop garden. According to the article, more and more hotels across North America are copying the Fairmont idea and either planing their own gardens or partnering with local farmers.
